Chestnuts, queens of this season, arrive differently this autumn.

Ingredients:
- 500 g cooked chestnuts
- 150 g almond flour
- 60 g stevia
- 1 tablespoon of Graduva Avocado Oil
- 4 eggs
- Zest of 1 lemon
Preparation:
- Cook the chestnuts in water with a little salt and fennel.
- Reduce them to a coarse puree. Beat the egg whites until stiff, and set aside.
- Beat the yolks with the stevia, and add the Graduva Avocado Oil and the lemon zest.
- Add the almonds and the chestnut puree.
- Fold everything in the beaten egg whites.
- Line a shape with parchment paper.
- Pour the mixture and bake in a preheated oven at 180ºC for about 30 minutes.
- Remove from oven, unmold and decorate.
