Chestnut Cake

Chestnut Cake

Chestnuts, queens of this season, arrive differently this autumn.
Why not eat this fruit in the form of a healthier cake? See our chestnut cake recipe below.

Ingredients:

  • 500 g cooked chestnuts
  • 150 g almond flour
  • 60 g stevia
  • 1 tablespoon of Graduva Avocado Oil
  • 4 eggs
  • Zest of 1 lemon

Preparation:

  1. Cook the chestnuts in water with a little salt and fennel.
  2. Reduce them to a coarse puree. Beat the egg whites until stiff, and set aside.
  3. Beat the yolks with the stevia, and add the Graduva Avocado Oil and the lemon zest.
  4. Add the almonds and the chestnut puree.
  5. Fold everything in the beaten egg whites.
  6. Line a shape with parchment paper.
  7. Pour the mixture and bake in a preheated oven at 180ºC for about 30 minutes.
  8. Remove from oven, unmold and decorate.
