Carrot and Coconut Muffins
Halloween is coming. Have fun with the youngest, your friends or family with some sweets but without neglecting the diet!
We bring you the recipe for carrot and coconut muffins that you can decorate according to the season or save for the rest of the year!
Ingredients:
- 3/4 cup of raw almonds;
- 1/2 cup unsweetened shredded coconut;
- 1/2 cup of oat flakes;
- 1 teaspoon of baking soda;
- 1 teaspoon ground cinnamon;
- 1/2 teaspoon grated nutmeg;
- 1/2 teaspoon of clove powder;
- 1/4 spoon of salt;
- 1 spoon of grated ginger;
- 1/2 teaspoon of vanilla extract;
- 1/2 cup of pumpkin puree;
- 2 eggs;
- 1 very ripe banana;
- 3 tablespoons of honey;
- 3 tablespoons of Graduva Avocado Oil;
- 1/2 cup of coconut milk.
Preparation:
- Preheat the oven to 180º.
- Grind the almonds, grated coconut and oats until they form a flour, mix in a container with the rest of the dry ingredients.
- Beat the eggs for two minutes;
- Add the eggs and the rest of the ingredients and mix;
- Pour the mixture into paper muffin tins.
- Place in the oven for 25 minutes. Then remove and let cool.
- Decorate to taste
