Ingredients:

Base:
  • 200g digestive biscuits
  • 100g melted butter
  • 1 tablespoon avocado oil
Filling:
  • 600g cream cheese
  • 200g sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 200ml heavy cream
  • 1 tablespoon avocado oil
Red Berry Topping:
  • 200g red berries (strawberry, raspberry, blackberry, blueberry)
  • 2 tablespoons sugar
  • 1 teaspoon lemon juice
  • 1 tablespoon avocado oil

Instructions:

Base Preparation:

  1. Preheat the oven: to 180°C (350°F).
  2. Prepare the base: Crush the biscuits until you get fine crumbs. Mix the biscuit crumbs with the melted butter and avocado oil until a uniform dough forms.
  3. Form the base: Press the biscuit mixture into the bottom of a springform pan (about 22 cm in diameter), forming an even layer.
  4. Bake the base: Bake for about 10 minutes, then let it cool.

Filling Preparation:

  1. Mix cream cheese and sugar: In a large bowl, beat the cream cheese with the sugar until creamy and well incorporated.
  2. Add the eggs: Add the eggs one by one, beating well after each addition.
  3. Finish the filling: Add the vanilla extract, heavy cream, and avocado oil, mixing until smooth.
  4. Pour the filling over the base: Pour the cream cheese mixture over the baked and cooled biscuit base.

Baking the Cheesecake:

  1. Bake the cheesecake: Place the cheesecake pan in a larger baking pan with water (water bath) and bake for about 60 minutes or until the center is set.
  2. Cooling: Let the cheesecake cool completely before unmolding. Then, refrigerate for at least 4 hours or overnight.

Red Berry Topping Preparation:

  1. Cook the red berries: In a saucepan, add the red berries, sugar, and lemon juice. Cook over medium heat until the berries start to break down and form a thick sauce.
  2. Finishing: Add the avocado oil and mix well. Let it cool before placing it over the cheesecake.

Assembly:
